“The Punjabis, as a people, have an enormous love for food — and for sharing it. In Punjab, a meal isn’t just about eating, it’s about gathering, celebrating, and showing love through flavour. At the Brilliant Gastro in Southall, where my family and I cook every day, that same spirit is alive in every dish — and it’s exactly what I’m bringing to my masterclass at Divertimenti.” – Dipna Anand
Menu — Cook Alongside Dipna
Jeera Rice
Light and fluffy basmati rice delicately infused with cumin seeds, creating a simple yet deeply aromatic accompaniment that pairs beautifully with rich curries and grilled dishes.
Cucumber & Onion Raita
A cooling yogurt side dish made with fresh cucumber and onions, lightly seasoned with roasted cumin and black pepper for a refreshing balance of flavour and spice.
Onion Bhajis
Based on Dipna’s grandfather’s 80-year-old recipe. These small, crisp bhajis are made with onions, spinach, and potatoes, delicately spiced with raw mango powder and pomegranate powder for a beautifully tangy, irresistible flavour.
Chicken Tikka Masala
Tender chicken marinated in spiced yogurt, roasted in the oven, and finished in a rich, flavourful tikka masala sauce. Garnished with garam masala and freshly chopped coriander for the perfect finishing touch.
